Tip: Chop your herbs as fine as possible. The chimmichuri should almost have a pesto-like consistency.

Prepare Sweet Potatoes
- Heat oven to 425°F.
- Wash sweet potato and cut into 1/2 inch thick fries.
- Line a baking sheet with foil.
- Toss sweet potato in medium bowl with 1 tbsp. olive oil, spice blend, and breadcrumbs.
- Season to taste with salt and pepper.
- Place into oven for 15-20 minutes, until tender and edges are browned.

Cook Striploin
- Drain steak and pat dry with paper towel.
- Cut in half lengthwise, creating two thinner steaks.
- Season both to taste with salt and pepper.
- Wash hands, knife and cutting board with warm soapy water.
- Heat a skillet over medium-high and add 1 tbsp. butter and half of the garlic.
- Place steaks fat side down in the skillet and cook for 3-4 minutes per side, until browned on top and bottom and steak reaches an internal temperature of 135°F.

Cook Onions
- Remove steak from skillet and let rest for 5 minutes to an internal temperature of 145°F.
- Add onions to skillet and cook for 4-6 minutes on medium until soft and browned.

Prepare Foccacia
- Cut foccacia in half.
- Brush 1 tbsp. olive oil on the insides of the foccacia.
- Place in the oven on the middle rack, insides facing up.
- Bake for 4-6 minutes or until edges are golden brown.

Prepare Chimmichuri + Herb Mayo
- Wash and dry spring mix, cilantro and parsley.
- Pick and finely chop cilantro and parsley leaves.
- In a small mixing bowl, combine 1 tbsp. olive oil, cilantro, parsley, remaining garlic and red wine vinegar to taste.
- Season to taste with salt and pepper.
- Add 1 tbsp. chimmichuri to half of the mayo and mix well.

Assemble + Serve
- Slice steak diagonally against the grain, into half inch thick slices.
- Spread remaining mayo onto the insides of the foccacia.
- Add onions, spring mix, and steak onto the bottom half of the foccacia.
- Spoon remaining chimmichuri on top of steak slices.
- Divide sweet potato fries onto serving plates with a dollap of herb mayo.
- Enjoy!
