Cooking Directions


Tip 1: Have your heat no higher than medium in Step 3 to prevent your sauce from splitting.
Tip 2: Turmeric stains so keep your white clothes away from this recipe!


Cook Rice

  • Heat oven to 425°F.
  • Rinse and drain jasmine rice in a fine mesh sieve.
  • Add jasmine rice to a small pot with 1 ½ cups salted water and bring to a boil.
  • Reduce heat to low and cover with a lid.
  • Cook for 15–18 minutes or until grains are tender.

Roast Vegetables

  •  Line a baking sheet with foil.
  • Toss carrot, onion, and fennel with 1 tbsp. olive oil.
  • Season to taste with salt and pepper.
  • Roast for 14–16 minutes until vegetables are tender and edges are crisp.

Begin Coconut Turmeric Sauce 

  •  In a small saucepan, whisk together coconut milk, sesame oil, and spice blend.
  • Add fish sauce and sambal oelek to taste.
  • Place over medium heat and whisk to combine.
  • Set a timer for 8 minutes.

Prepare Ingredients

  • Meanwhile, wash, pick and chop mint leaves.
  • Cut lime in half.
  • Drain cod and pat dry with paper towel.
  • Season all sides with salt and pepper.

Cook Fish

  • Once timer from Step 3 has gone off, add cod into coconut turmeric sauce.
  • Cook for 6–8 minutes, rotating in sauce halfway through until fish begins to flake and is an internal temperature of 158°F.

Finish + Serve

  • Squeeze lime to taste into coconut turmeric sauce.
  • Divide jasmine rice and vegetables into serving bowls.
  • Top with cod and coconut turmeric sauce.
  • Garnish with mint.
  • Enjoy!
