Prepare Tortilla Chips

  • Heat oven to 425°F and place rack 6 inches from the top.
  • Line a large baking sheet with foil.
  • Stack corn tortillas and slice into 6 equal wedges.
  • Toss wedges on baking sheet with 1 ½ tbsp. oil and spread in an even layer on sheet.
  • Season to taste with salt and pepper, and bake for 12–14 minutes, flipping halfway, until crisp and golden.
  • Monitor closely to prevent burning.

Prepare Ingredients

  • Meanwhile, wash green onion, cilantro, bell pepper, and jalapeno.
  • Slice lime in half.
  • Pick and chop cilantro leaves.
  • Thinly slice green onion.
  • Cut both bell pepper and jalapeno in half and remove stem and seeds.
  • Slice bell pepper into ¼ inch strips and jalapeno into ⅛ inch slices
  • Wash hands with hot soapy water.

Cook Vegetables + Beef

  • Heat 1 tbsp. oil in a large oven-proof skillet over medium heat.
  • Once hot, add onion and bell pepper and cook for 3–4 minutes until softened.
  • Add garlic and half of the jalapeno to taste and cook for 1 minute until fragrant.
  • Meanwhile, drain and pat dry ground beef.
  • Add ground beef and use a wooden spoon to break apart, cooking for 2–3 minutes, until browned.
  • Add spice blend and fire-roasted tomatoes and season to taste with salt and pepper.
  • Cook for 3–4 minutes more until mixture thickens and beef reaches an internal temperature of 160°F.

Prepare Chipotle Sour Cream

  • Meanwhile, in a small bowl stir together sour cream, mayonnaise and season to taste with ground chipotle, salt and pepper, and half of the lime juice.

Finish the Skillet

  • When chips are finished baking, remove from oven and turn broiler on to 500°F.
  • Stir in one third of the baked tortilla chips into the skillet along with half of the aged cheddar cheese.
  • Garnish with remaining cheese.
  • Place skillet in oven for 1–2 minutes until cheese is melted.
  • Monitor closely to prevent burning.

Finish and Serve

  • Garnish skillet with radishes, green onion, chipotle sour cream, and remaining cilantro
  • Season to taste with remaining jalapeno.
  • Slice remaining lime into wedges and serve on the side with remaining tortilla chips.
