Cooking Directions


Cook Fries

  • Turn on oven to 450°F and line a baking tray with foil.
  • Wash potatoes and cut into ¼ inch thick fries.
  • Place fries on baking sheet and pat dry with paper towel.
  • Toss fries with potato spice, half of the rice flour, and season to taste with salt and pepper.
  • Toss with 2 tbsp. olive oil and spread evenly on baking sheet.
  • Bake 22–24 minutes, until crisp and golden.

Prepare Ingredients

  • Meanwhile, wash cucumber, tomato, and dill.
  • Dice tomato into ½ inch cubes.
  • Pick and finely chop dill.
  • Slice lemon in half.
  • Slice half of the cucumbers into ½ inch cubes.
  • Grate remaining cucumber and squeeze out excess moisture in a fine mesh sieve.

Prepare Tzatziki Sauce

  • In a small bowl, stir together grated cucumber, dill, Greek yogurt, and ½ tsp. garlic.
  • Season to taste with half of the lemon juice and salt.


Prepare Chicken

  • Drain chicken thighs and pat dry with paper towel.
  • Dice chicken roughly into 1 inch pieces and place in a large bowl.
  • Add chicken spice, remaining rice flour, salt, and pepper, and toss to coat.

Cook Chicken

  • Heat 2 tbsp. olive oil in a large non-stick skillet over medium-high heat.
  • Once hot, add chicken to skillet and cook undisturbed for 2 minutes.
  • Flip chicken, add remaining garlic and cook 1–2 minutes until chicken reaches an internal temperature of 165°F.

Prepare Salad

  • In a medium bowl, combine cucumber, tomato, red onion, kalamata olives, and 1 tbsp. olive oil.
  • Season to taste with remaining lemon juice and salt and pepper.

Finish + Serve

  • Divide fries among plates, and garnish with tzatziki sauce, chicken, and 2–3 tbsp. salad.
  • Serve remaining salad on the side, and garnish everything with crumbled feta.
  • Enjoy!
