Cooking Directions

Roast Vegetables

  • Heat oven to 425°F.
  • Line a baking sheet with foil.
  • Toss sweet potato and butternut squash onto baking sheet with 1 tbsp. oil, and season to taste with salt and pepper.
  • Put baking sheet in oven and set timer for 7 minutes.

Prepare Ingredients

  • Meanwhile, wash apple and lemon.
  • Peel and dice apple into 1/2 inch cubes.
  • Zest and cut lemon in half.

Finish Vegetables

  • When timer goes off in Step 1, turn vegetables and push them to one half of the baking sheet.
  • Add broccoli and toss with 1 tbsp. oil and salt and pepper to taste.
  • Roast for 15 minutes, or until tender and golden

Cook Pork Chops

  • Drain pork chop and pat dry with paper towel.
  • Season both sides well with salt and pepper.
  • Heat 1 tbsp. oil over medium-high in a skillet.
  • Cook pork for 2 minutes on one side, or until crispy and golden.
  • Turn pork over and add apple, onion and walnuts to skillet.
  • Cook together for another 2–3 minutes, stirring occasionally, until pork chops reach an internal temperature of 160°F.

Make Apple Caramel Sauce

  • Turn heat down to medium and add 1 tbsp. butter, brown sugar, 1/2 cup water, spice blend, lemon zest, half of the lemon juice and red pepper flakes to taste.
  • Bring to a low boil for 1 minute, or until sauce thickens to desired consistency.
  • Swirl everything together in skillet for sauce to coat apples and pork.

Serve

  • Divide pork and roasted vegetables onto plates.
  • Spoon apple caramel topping over top and add remaining lemon to taste.
  • Enjoy!
