Heat a large skillet with a drizzle of oil over medium. In a bowl, combine the ground turkey, breadcrumbs and salt and pepper to taste. Mix well with clean hands until the breadcrumbs are well incorporated. Form 2 patties (4 patties for 4 servings) and place them in the hot skillet. Cook for 5-7 minutes per side or until an internal temperature of 165°F is reached.

While the burgers are cooking, prepare the blue cheese dressing. In a bowl, mix together the mayonnaise, sour cream, half of the lemon juice, and salt and pepper to taste. Crumble in the blue cheese and mix everything together well. Set aside. (Save the remaining lemon for another use!)

Wash and chop the lettuce into bite sized pieces. Wash and halve the cherry tomatoes, and slice the cucumbers into 1/4 inch rounds. Slice the buns open, and warm in the oven or microwave if desired.

Once the burgers are finished, remove them from the skillet and set aside. Reduce heat in the skillet to low and add 1 tbsp. of butter (2 tbsp. for 4 servings). Add the buffalo sauce and honey, and whisk gently until the ingredients are combined. Add the burgers back into the skillet and spoon the sauce over them to coat.

To assemble the meal, place a burger patty on each bun and spoon over the buffalo sauce to taste. Top the burgers with some of the sliced cucumber, and blue cheese sauce. Divide lettuce, red onion, tomatoes, and remaining cucumber between serving dishes. Top with the remaining blue cheese dressing and enjoy!
