JUICERY CO x FRESH PREP. We created this meal in collaboration with the Juicery Co., a local business in Vancouver that specializes in vegetarian and vegan dishes! This meal involves a delicious new ingredient - jackfruit! With a rich pulled pork-like flavour, Vegetarians and Vegans will love how we tossed jackfruit in a soy ginger garlic sauce and added it to crunchy lettuce leaves for a refreshing, yet indulgent meal.

Cooking Directions

Open the cans of jackfruit and drain liquid well. Using clean hands, pull the jackfruit pieces apart into stringy pieces - as if you would pulled pork. The core of the jackfruit is somewhat harder than the outer part, so you can cut those pieces using a knife into bite sized chunks. Heat a skillet over medium with 2 tbsp. (4 tbsp. for 4 servings) of oil. Once hot, add the jackfruit and saute for 4-5 minutes.

While the jackfruit is cooking, prepare the sauce in a small mixing bowl. Whisk together hoisin, soy sauce, ginger, garlic and lime juice until smooth. Set aside.

Once the jackfruit is starting to have a bit of colour and is warmed through, add the prepared sauce to the skillet. Toss together ensuring the sauce coats all the jackfruit and saute for another 4- 5 minutes. Separate and wash the romaine lettuce leaves.

Place jackfruit in a bowl, and toss with cabbage and carrots. Scoop jackfruit and vegetable mixture into your lettuce cups. Wash and tear over cilantro and cashews. Enjoy!
