Cooking Directions

Prepare Quiche
- Heat oven to 425°F.
- Line a baking sheet with foil.
- In a medium mixing bowl, whisk together eggs, herb blend, onions, and goat cheese.
- Season to taste with salt and pepper.
- Place pie shells on baking sheet, leaving foil on pie shells.
- Wash and rip spinach into 1 inch pieces.
- Divide spinach evenly between shells.
- Using a ladle, divide egg mixture evenly between shells.
- Place in the oven immediately.

Prepare Ingredients
- Wash tomatoes, mushrooms, oregano and basil.
- Cut mushrooms in half.
- Cut tomatoes into 1/2 inch rounds.
- Pick and finely chop basil and oregano leaves.

Cook Quiche + Mushrooms
- Carefully remove baking sheet from the oven.
- On the same tray, toss mushrooms with 1 tbsp olive oil and half of the garlic.
- Season to taste with salt and pepper.
- Place baking sheet back into oven and bake for 12-15 minutes.
- Cook until edges of quiche have puffed up significantly and center springs back to the touch, and mushrooms are tender.
- Return quiche to the oven if necessary until fully cooked.

Marinate Tomatoes
- In a medium mixing bowl, whisk together 1 and 1/2 tbsp olive oil, red wine vinegar, oregano, basil, and remaining garlic.
- Season to taste with salt and pepper.
- Add tomatoes to bowl and using clean hands, rub the marinade into the tomatoes.

Serve
- Divide marinated tomatoes and garlic mushrooms onto serving plates.
- Remove quiches from foil and place on serving plates.
- Enjoy!
